Tag and Taco Soup





Merry Christmas! May the holiday season bring happiness and joy to you and your loved ones!! Absolutely the best sentiment ever. It is my sincere hope that you are enjoying time with those you love. 


This tag was attached to gift bags that held the ingredients to make taco soup. I can't send each of you a bag but I can at least give you the recipe. It is soooo easy and great for a chilly evening meal.

Taco Soup Recipe

1 1/2 lbs ground beef
2 cans Ranch style pinto beans
2 cans diced tomatoes
1 large can hominy
1 can diced  R
otel tomatoes
1 med. onion
1 pkg mild taco seasoning
1 pkg ranch style salad dressing mix


Brown beef and onion. Add to crock pot.  Stir in all other ingredients and cook on low for several hours.
Great served with torilla chips and cheese.

Servings – 6

Easy Garlic Chicken



How about an easy dinner? This is a recipe I found through Pinterest. Frankly it is getting mixed reviews but we enjoyed it. Just be careful when sauteing the garlic and oil. My husband had to do it a second time because it came together so quickly. Another tip would be to line your baking dish with foil. The clean-up was NOT so easy as you can see in the picture above.

Easy Garlic Chicken - serves 4
Ingredients:
4 boneless skinless chicken breasts
4 garlic cloves, minced
4 tablespoons brown sugar
3 teaspoons olive oil

Directions:

1. Preheat oven to 500°F and lightly grease a casserole dish.
2. In small sauté pan, sauté garlic with the oil until tender.
3. Remove from heat and stir in brown sugar.
4. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
5. Add salt and pepper to taste.
6. Bake uncovered for 15-30 minutes.


New Recipe - Stacey's Mexican Soup


Do you ever read the recipes in the paper or a magazine and wonder who would ever fix that one? So. . . I was surprised to find a recipe in our local paper that I wanted to make and prepared it the same night!! With all the ingredients on hand, this could not have been easier. It had just enough spice to be perfect for a cold evening.



Stacey’s Mexican Soup – Super easy and quick
Makes 6 servings


1 cup water
1 cup instant rice (I used 2)
1 10-ounce can Rotel tomatoes
1 14-ounce can chili beans (I used 2)
1 14-ounce can black beans, drained and rinsed
2 cans cream of chicken soup
1 14-ounce can chicken broth
1 package fajita seasoning
2 cups cooked chopped chicken (I used a Swanson canned chicken for ease)
Bunch of cilantro, chopped (didn’t use)
Shredded Mexican cheese blend, for garnish


1. Heat water in a large pot over stove and add rice. Turn down heat to low while preparing other ingredients.


2. Add all other ingredients except cheese and heat thoroughly. Ladle into -bowls and top with shredded cheese.


Nutritional analysis per serving: 458 calories, 15 grams fat, 49 grams carbohydrates, 34 grams protein, 65 milligrams cholesterol, 1,855 milligrams sodium, 7 grams dietary fiber, 28 percent of calories from fat.

Valentine Card & Taco Soup





I was able to combine 2 challenges with this card. First, 2Sketches4U as the layout and then sewing on my card for JUGS.

I also used glitter for the first time. I had been avoiding it but I decided to use 1/4 scor tape and Martha Stewart glitter. I was pleasantly surprised at how easy it was! I also used 2 way glue around the frame.

One of the fun dates of January is that this month is National Hot Soup Month. So I'm sharing my Taco Soup recipe. This couldn't be any simpler. Perfect way to make sure your family has dinner and you have time to craft.

For my Project Life photo of the day, I decided to take a pix of the ingredients in the crock pot. Color inspiration--I don't think so!

Taco Soup for the Crock Pot

1 1/2 lbs ground beef
